if your Strand desk is feeding old Strand dimmers they probably work on 0v to -10v, rather than 0v to +10v, in which case you probably need to look for something 2nd-hand.
No need for second hand the showtec multi exchanger will take in dmx and spit out + 10 or - 10v . If however the stand dimmers are expecting D54,well good luck, Dmx to D54 convertors are nearly as common as rocking horse manure.

putting up with the pain once to put wired dmx cables in is surely better than the pain of trouble shooting temperamental wireless networks every time the planets are at the wrong angle.

a rotary encoder is a rotary encoder, about the olny thing different between makes apart from the physical size is the number of pulses per rotation and whether its dented or not.There not much more than a fancy spdt switch.

problem with that is your splitting different things across different pairs which may lead to future issues.I'd go with the original but double pin 4 as an earth with 3,or depending on the signal type 1 and 3 as the party signal with 2 and 4 as party earths

If (having installed the software) you right click on the exe file and select "Properties" then the "compatibility" tab you can select to run it as XP or "run compatibility troubleshooter". This may or may not help depending on what the problem is.
As well as xp compatibility mode you may need to run it as admin.its somewhere in the same right click menu.

As its a school why cant ya r̶o̶b̶ borrow the bits from various departments to throw a coms system together, small amp from physics and headsets from the language lab was our make do system,but even that was a big improvement on the old telephone handsets and a 9v battery that we started with.
