If you can ensure that the weight is evenly distributed and both stands lift at the same speed then sure, you could add the loads of both together. However since they're manual you'll really struggle to match the lifting speed exactly so you do need to de-rate that figure slightly. The amount of course is hard to judge in advance as it's completely variable. Once thing you can do to help is do up the half couplers on top loosely when lifting, then do them up properly when you get to the top. If there is a bit of give in the pickups, it will allow the truss to sit at a slight angle and keep the weight on both stands. If the half couplers on one stand are done up to hell and back, the other end will only be able to bend as far as deflection allows which may not be very much. Hope that makes sense? Remember the take out of this the weight of the truss and the cable (which may not be symmetric) then see what the remaining loading available is.
