LED `Neon` flex does mix colour well but not easy to mount and cost adds up suprisingly quickly. LED tape dosent do face on curves too well but is available at manageable cost. Rather than a dimmer to control these things , you want a DMX LED Driver, typically use a low voltage PSU at 12 or 24V input and output`s 3 DMX controlled channels.
