I do mean CMYK

Sometimes it's referred to as YCbCr444 but my converter says cmyk/rgb on the switch

CMYK (Cyan,Magenta,Yellow,Key) is a subtractive colour space for printing and has nothing to do with YCbCr so I'm not sure what the person who programmed your switch is thinking.

RGB (Red,Green,Blue) and YCbCr (Luma,Chroma Blue Difference,Chroma Red Difference) are additive colour spaces for emissive devices such as projectors. RGB and all the YCbCr colour spaces are related by a exact mathematical transform.

The reason for using YCbCr rather than RGB everywhere is it allows for chroma sub sampling to reduce required data rates.
