Digital Audio Over CAT5 or XLR

I have a problem in our local school hall.

 

They have a multicore cable with 12 lines that our armature group can hire when we use the hall.

 

The problem I have is that I need more lines than the school has installed. At the moment I am using a hired multicore to get around the problem but this being a school hall all the kit has to go in and out after every show.

 

I would like to use the current cable or to run a CAT5 cable that I could leave in and not have to worry about it being lost stolen or damaged.

 

So does anyone know of a way to run multiple balanced audio over either one or two balanced XLR cables or a CAT5?

I'm thinking if the signals are converted from analogue to digital this would reduce the number of cables required. Then all I would need is another convertor at the other end to convert them back to analogue again to put back in the desk.
