Where a digital value is represented by more than one Byte of Binary information, the Byte which represents the higest value digits is called the 'Most Significant Byte'.

For example, the decimal value 17042 is represented in binary as 01000010 10010010 with the first set of binary digits being the 'Most Significant Byte'.
